My Favorite Teas
|
Ceylon Tea Brisk Full Flavor with a bright color. Assam Assam is known for its body, briskness, malty flavor. Earl Grey Scented with the Oil of Bergamot (a citrus fruit from Sicily) This blend of black teas is robust yet refined. Russian Caravan Exotic flavors & scents along the trade routes through China were said to have inspired this smoky, hearty & enchanting blend |

To Make a Good Tea
1/ Only use fresh, high quality tea
2/ Use fresh water only
3/ Warm your teapot with hot water
4/ Use the right amount of tea :
1 per person, plus 1 for the teapot
5/ Let the tea brew for 3 to 5 minutes
6/ Serve straight away

English Scones
|
2 cups flour 2 tsp. baking powder 2 tbsp. sugar 1/2 tsp. salt 1 stick unsalted butter cut into pieces 1/2 cup milk 1 large egg, beaten Preaheat oven to 400 degrees Line a baking pan with cookie sheet Mix together flour, baking powder, sugar & salt. In a measuring cup, combine the milk & the beaten egg. With a blender or your fingertips, rub the butter into the flour mix, until it looks like crumbs. Add egg mix. Gently knead dough until it forms a ball. Roll out dough to 1 inch thick. With a floured 2 1/2 inches cutter, Cut out rounds & place on baking pan. Bake 15 minutes or until lightly brown on top. Serve at afternoon tea with cream or preserve. |

Scottish Shortbread
2 sticks Butter 2 cups flour Heat oven to 350 degrees. Mix sugar & butter until creamy then add flour. Knead for a long time! Shape dough to an inch thick. Cut in triangles, rectangles or else & prick with a fork. Bake on an ungreased cookie sheet for 15 to 20 minutes. |

Apple Crumble
|
6 apples 3/4 cup sugar 1 cup oats 1 cup flour 1/3 cup sugar 1/3 cup brown sugar 3/4 teaspoon salt 1/2 teaspoon cinnamon, nutmeg and allspice 1 stick butter Preheat oven at 375 degrees Peel and core apples. Add sugar & mix with apples Place in greased baking pan. Combine oats, flour, sugar & brown sugar. Add salt, cinnamon, nutmeg & allspice Add the butter cut in little pieces Spread the mix (crumbles) over the apples. Bake 45 minutes. |

Bread & Butter Pudding

7 slices bread Soft butter 4 c. milk 3 eggs, slightly beaten 1/2 c. sugar 1/4 tsp. salt 1/2 tsp. cinnamon Preheat oven to 325 degrees. Butter a medium baking dish. Spread butter generously on one side of each slice of bread. Line bottom and sides of baking dish with buttered bread. Mix milk, eggs, sugar, salt, cinnamon, pour over bread. Place extra pieces of buttered bread on top, press down to submerge. Let stand 10 mins or more if bread is very dry. Bake, cover for 30 minutes, then uncover for 30 minutes. Serve warm. |

Lemon Curd
| 7 large lemons 1 1/2 c sugar 4 eggs beaten 1/2 c butter cut up Wash lemons and dry them. Finely shred lemon peels to make 1/4 cup. Squeeze enough juice from lemons to make 1 1/3 cups. In a heavy saucepan combine the juice and sugar. Stir in the eggs, butter and 1/4 cup lemon peel. Cook and stir constantly over medium heat (do not boil) until mixture thickens (coats spoon) It takes about 8 minutes. Remove from heat and put in jars. Store in refrigerator up to 2 months. |
